St Lucia: Newcastle's New Latin American Dining Experience Set to Open

Newcastle's vibrant Honeysuckle strip is about to welcome a new culinary destination, as construction progresses on St Lucia, a Latin American-inspired restaurant. The venue is the latest venture from local hospitality duo Garry and Melissa Risteski, who are aiming to bring a unique party vibe to the city's dining scene.

From Pub to Party Venue

The restaurant is taking shape at 11 Honeysuckle Drive, a site that has previously housed establishments like The Squire's Maiden and Hideout on the Harbour. Garry Risteski explains that the location's history as a pub provides advantages, including a large floorplan and late-night trading approvals.

"Now it's just a matter of how far can we push the dining experience there, because that's what people are looking for these days," Risteski says. "Statistics are showing that people are eating out less but spending more when they do."

A Broad Latin American Flavour

Rather than focusing on a single cuisine like Mexican or Peruvian, St Lucia will offer a diverse menu that captures the essence of Latin America. Diners can expect:

  • Savory empanadas
  • Zesty ceviches
  • Grilled meats and seafood
  • Large sharing plates

"We want to be able to give it the feel of a party, rather than making it feel like anything too specific," Risteski emphasises. "We want to push the boundaries of hospitality and dining in Newcastle and give diners a feeling of escapism."

Local Roots and Expansion

The Risteskis have deep roots in the Newcastle area. Garry grew up in Dudley and began working in his family's businesses from a young age. Today, their Risteski Group operates multiple venues including Blanca and The Kingfish at Honeysuckle, and The Swordfish Co at Budgewoi and Warners Bay.

With St Lucia scheduled to open in April, the group will have three venues in close proximity at Honeysuckle. Risteski believes collaboration with neighbouring businesses is key to success.

"To be successful you must work with your neighbours, promoting them as they promote you," he says. "If we grow, we grow together. For us, the way we see hospitality moving forward, is to be united."

Creating a Dining Experience

The couple's commitment to creating exceptional dining experiences led them to research Latin American restaurants in Dubai during the planning stages. Risteski notes that while financial success is important, their primary motivation is serving guests and elevating Newcastle's hospitality standards.

"If what we were doing was about money only, I would have just two businesses and we would probably be better off," he admits. "But creating a difference in the dining scene, this is our life's work. However, at the core of what we do is serving our guests. That's our passion."

With a team of over 100 staff and a growing presence in Newcastle's dining landscape, the Risteskis are poised to bring their vision of flame, food, music, and entertainment to life at St Lucia this April.
