Sunnyboys Kiosk Expands to Foreshore Park, Opening Late January 2026
Familiar faces to run new Foreshore Park kiosk

Newcastle's popular Foreshore Park is set to gain a vibrant new dining hub, with the keys to a brand-new kiosk handed over to well-known local operators. Thomas and Nova Carias-Cox, the faces behind the beloved Sunnyboys Kiosk at Dixon Park Beach, are expanding their footprint to the city's premier harbour-side park.

A New Chapter for Park-Goers

The couple, who grew up in a family hospitality business and currently run three Morning Market Coffee locations in Whitebridge, Newcastle West, and Warners Bay, will operate the new venture under the name Sunnyboys Park. Scheduled to open its doors in late January 2026, the kiosk promises a relaxed, family-friendly atmosphere.

The menu will cater to park visitors with classic favourites, including fish and chips, hamburgers, sandwiches, ice creams, refreshments, and coffee. Thomas Carias-Cox expressed genuine excitement about taking on the "special space in an incredible location." He highlighted that the experience will be further enhanced when the new inclusive playground and waterplay area open later next year.

"We love the idea of creating a relaxed, welcoming spot where families can spend time, kids can play and everyone can enjoy great food and coffee in the heart of the park," Mr Carias-Cox said. "We're really looking forward to becoming part of the foreshore community and bringing this space to life."

A Milestone in Foreshore Revitalisation

The completion of the kiosk and an adjacent, fully accessible public amenities building represents the first major project delivered under the adopted Harbour Foreshore masterplan. City of Newcastle Asset Advisory Committee chair, Councillor Declan Clausen, said the new facilities will significantly improve the experience for the thousands of Novocastrians and visitors who use the park.

"The Harbour Foreshore is a major drawcard," Cr Clausen stated. "Our adopted masterplan was guided by community feedback and represents a shared vision to activate and connect public spaces between the city and the harbour's edge."

He emphasised that the project is a key milestone in the council's ongoing work to revitalise the area, providing a more convenient, comfortable, and accessible experience for all park users.

Enhanced Accessibility and Community Celebration

The new amenities building, located next to the site of the future playspace, includes several important features designed for inclusivity:

  • Unisex ambulant toilets.
  • A dedicated parents' change room.
  • A Changing Places facility for people who cannot use standard accessible toilets.

The area will also be equipped with concrete table and bench seating, low walls for informal seating, and a new footpath to improve connectivity within the park. To mark the opening, a free community event is planned for January 31, 2026, featuring family activities, live music, treats, and coffee.

Newcastle MP Tim Crakanthorp welcomed the development, noting the state government's commitment to supporting projects that deliver better public spaces. "It is great to see the new kiosk fall into the hands of local operators and I can't wait to grab a bite to eat at Sunnyboys Park," he said.

The Foreshore Park upgrades have been supported by funding from the NSW Government, Variety the Children's Charity, the Touched by Olivia Foundation, and the Newcastle Port Community Contribution Fund.
