Australian-Italian YouTube sensation Vincenzo Prosperi and his wife Suzanne are bringing a genuine taste of tradition to Sunrise, showcasing their classic tomato bruschetta made with ripe tomatoes, fragrant basil, and perfectly charred bread.

Straight from their new cookbook, Authentic Italian, this "Nonna-approved" recipe proves that you don't need to dine out to capture the real flavors of Italy. The couple emphasizes that bruschetta, derived from the Italian word bruscare meaning 'to roast over coals', fundamentally requires well-toasted bread to achieve authenticity.

Bruschetta Di Pomodoro Tomato Bruschetta

SERVES 4 as a side

Ingredients:

  • 2–3 ripe tomatoes
  • Extra virgin olive oil (EVOO), qb
  • Salt and pepper
  • 2 garlic cloves, peeled, 1 crushed, 1 whole, for rubbing
  • Small handful of basil leaves
  • 4 slices sourdough or pane di casa, 1–1.5cm (1/2 inch) thick

Method:

  1. Roughly chop the tomatoes directly into a bowl to capture every ounce of juice – a messy but worthwhile step.
  2. Add a generous amount of EVOO, salt, pepper, and the crushed garlic.
  3. Reserve 2 basil leaves for garnishing, then add the rest, breaking the leaves into smaller pieces with your hands or leaving them whole. Avoid cutting them, as Italians traditionally prefer this method.
  4. Mix together using your hands or a spoon and leave for 10–20 minutes to rest at room temperature.
  5. Prepare the bread by adding slices to a hot barbecue grill and cooking on both sides to achieve a golden, crispy texture. Lightly charred is ideal for the best flavor.
  6. Once the bread is ready and still hot, rub the extra garlic clove on one side to allow it to slightly melt.
  7. Place the bread on a large chopping board with the garlic side facing up. Using a tablespoon, scoop up juice from the tomato mixture and pour it over each slice before adding the tomato mixture, more juice, and the reserved basil leaves torn roughly.
  8. Drizzle additional EVOO on top for extra richness.

Tips and Variations

If fresh tomatoes are unavailable, it's best to experiment with alternative toppings such as seafood, pickled vegetables, or cheeses. For a herby twist, spread a thin layer of pesto on the bread before adding toppings, which enhances the bruschetta with notes of rich basil and garlic. Adding melted mozzarella on top can also elevate the dish.

For those with Calabrese heritage, finely diced red onion can replace the garlic. Most bread varieties work well, with sourdough and pane di casa being favorites. Interestingly, the bread doesn't need to be fresh; slightly stale bread can actually be perfect for achieving the desired texture.
