As the final days of 2025 approach, one West Australian craft brewery has created the perfect liquid farewell to a year many are ready to put behind them. Rocky Ridge Brewing Co., based in Busselton, has launched an audaciously flavoured limited-edition beer that perfectly captures the 'I'm Out' sentiment.
A Festive, Flavour-Packed Farewell
The beer in question is the I'm Out Apricot, Vanilla, Cinnamon & Maple Ice Cream Sour. Brewmaster and co-owner Hamish Coates describes the creation as "absolutely bonkers," a deliberate and complex flavour bomb designed for the holiday season. It combines festive warming spices with creamy, fruity notes, creating a unique drinking experience meant for kicking back and relaxing as the year concludes.
Breaking Down the Brew
This isn't your average summer ale. The brewers have built this sour on a foundation of their RR Sustainable Base Pilsner and Rolled Oats malt. The distinctive flavour profile comes from a meticulous blend of tetrahops, apricot, vanilla, cinnamon, maple syrup, and lactose for that signature ice-cream mouthfeel.
In the glass, it presents a pale apricot colour with a soft, frothy head. The aroma is an immediate sour hit, quickly followed by the prominent scent of ripe apricot. Behind that, subtle notes of vanilla, a whisper of cinnamon, and a hint of maple syrup create an inviting, complex nose.
Taste and Verdict
The first sip delivers on the promise of its name. The palate is treated to a creamy, luxurious mouthfeel that balances ice-cream sweetness with a sharp, tart fruitiness. The flavours of sweet apricot and spice linger pleasantly, while the initial tartness fades to a refreshing finish. With an alcohol content of 6.1% ABV, it's substantial enough to be interesting but sessionable enough for sharing over long holiday afternoons.
Available for $9.99 per single can or $38 for a four-pack, this limited release can be found at Rocky Ridge's own taphouses in Duncraig and Burswood, as well as through select craft beer retailers. It's a fittingly bold and celebratory send-off from one of WA's most inventive breweries.
