New family pub opens in Canberra's west with giant steak

A new family-oriented pub has arrived in Canberra's western suburbs, promising to become a long-term community hub with a signature steak described as 'the size of a table'.

A Fresh Start for a Local Venue

The Weston Bull has taken over the site at 45 Liardet Street in Weston, which was formerly occupied by The Meating Room before its closure in February 2025. The new establishment becomes one of only two pubs in the town centre, filling a notable gap for family-friendly dining and social venues in the area.

Co-owner and head chef Bhishup Abichandani has committed to a decade-long lease for the property, signalling a serious investment in the suburb's future. He emphasised his and his local business partner's dedication, stating, "We want to be a part of the community ... we are here for the long run."

Culinary Star: The Tomahawk Steak

The centrepiece of the new menu is a colossal 1.5-kilogram tomahawk steak, priced at $200 and designed to be shared between three to four people. Abichandani, whose resume includes 12 years at acclaimed Canberra venues like Otis Dining Hall and Pialligo Estate, is confident in his team's ability to deliver.

"I've been cooking steaks for a lot of years, and I think we do a very good steak," he said. He believes every dining spot should have a specialty, and for Weston Bull, this is it.

The secret, according to the chef, lies not just in the quality of the meat but in a painstakingly crafted sauce. The process involves slowly reducing a beef stock made from bones, herbs, and vegetables from 170 litres down to a concentrated five litres, before finishing it with brandy and butter.

For those not tackling the tomahawk, a standard steak will cost around $40, with a weekly Wednesday deal offering a steak and a drink for $29.

A Complete Transformation for Families

The new owners undertook significant renovations to revitalise the 30-year-old building, which Abichandani said needed a full refurbishment. The kitchen was completely overhauled, and all the furniture was replaced to create a modern, rustic atmosphere.

Understanding the need for family-friendly spaces, the pub features a dedicated children's room equipped with air hockey, Jenga, colouring-in books, and a foosball table.

Weston Bull is scheduled to open its doors to the public on Tuesday, January 20, 2026, aiming to establish itself as a cornerstone of local life in Weston for years to come.
