Celebrating Holi with Vibrant Chutneys: Recipes from a World Food Champion

Sumeet Saigal, the acclaimed winner of the World Food Championships Australia, is embracing the spirit of Holi, the colourful Hindu festival that heralds the arrival of spring and symbolises new beginnings. To mark this joyous occasion, she is sharing two of her favourite vibrant chutney recipes that are perfect for adding bold and exciting flavours to a wide variety of dishes, from simple snacks to elaborate main meals.

Date and Tamarind Chutney: A Sweet and Tangy Delight

This rich and flavourful chutney combines the natural sweetness of dates with the tangy depth of tamarind, creating a versatile condiment that can elevate any meal. Here is the detailed recipe to make this delicious chutney at home.

Preparation Details:

  • Prep time: 5 minutes
  • Cook time: 15 minutes
  • Total time: 20 minutes
  • Yield: Approximately 300 grams of chutney

Ingredients:

  • ½ cup seedless tamarind
  • ½ cup seedless dates
  • 3 cups of water
  • ½ cup of jaggery (palm sugar or raw sugar can be used as a substitute if jaggery is unavailable)
  • ½ teaspoon fennel seeds powder
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • 1 teaspoon Kashmiri red chilli powder
  • ½ teaspoon dry ginger powder
  • Salt to taste

Method:

  1. In a medium-sized saucepan, combine the dates, tamarind, jaggery, and water. Place the saucepan over medium heat and bring the mixture to a boil.
  2. Allow the mixture to boil for about 10 minutes, or until the dates and tamarind have softened completely, stirring occasionally to prevent sticking.
  3. Add all the spice powders—fennel seeds, coriander, cumin, Kashmiri red chilli, and dry ginger—along with salt to taste. Stir well to incorporate the spices evenly.
  4. Continue boiling for an additional 2 to 3 minutes, allowing the flavours to meld together beautifully.
  5. Remove the saucepan from the heat and let the mixture cool down to room temperature. Once cooled, transfer it to a blender and puree until smooth.
  6. For a smoother sauce-like consistency, strain the puree through a fine mesh sieve. Alternatively, leave it slightly chunky for a more traditional chutney texture.
  7. Transfer the finished chutney to an airtight jar and store it in the refrigerator. It will keep well for up to 3 months, ready to enhance your meals whenever needed.

Mint and Coriander Chutney: A Fresh and Zesty Accompaniment

This refreshing chutney is bursting with the vibrant flavours of fresh herbs, making it an ideal complement to a variety of dishes. Its bright green colour and zesty taste are sure to impress.

Preparation Details:

  • Prep time: 10 minutes
  • Cook time: 5 minutes
  • Total time: 15 minutes
  • Yield: Approximately 300 grams of chutney

Ingredients:

  • 1 cup coriander leaves and tender stems
  • 1 cup mint leaves (stems removed)
  • 2 cloves of garlic
  • 2 green chillies, roughly chopped
  • 3 tablespoons water or plain yoghurt
  • ½ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • ½ inch ginger, peeled and roughly chopped
  • Juice of half a lime
  • Salt to taste

Method:

  1. Place all the ingredients—coriander leaves, mint leaves, garlic, green chillies, water or yoghurt, cumin powder, coriander powder, ginger, lime juice, and salt—into a blender jar.
  2. Blitz the mixture on high speed until it reaches a smooth and uniform consistency. You may need to scrape down the sides of the jar occasionally to ensure everything is well blended.
  3. Once blended, transfer the chutney to a clean bowl or jar. It is now ready to be used immediately as a dip, spread, or accompaniment to your favourite dishes.
  4. Store any leftover chutney in an airtight container in the refrigerator. For the best flavour and freshness, use it within 4 days.
