Ingredients for Creamy Tuscan Chicken
- 2 tablespoons olive oil
- 4 chicken breasts, trimmed
- Sea salt and pepper to taste
- 1 small red onion, sliced
- 3 cloves garlic, finely chopped
- 1 teaspoon dried oregano
- 200g cherry tomatoes, halved
- 1 tablespoon tomato paste
- 4 cups baby spinach
- ½ cup (125ml) thickened cream
- ¼ cup freshly grated Parmesan cheese
- ¼ cup basil leaves to garnish

- 6 medium-sized potatoes, peeled and roughly chopped
- 40g butter
- ½ cup milk
Method for Mashed Potato
- Place the potatoes into an 18cm saucepan along with a pinch of salt and cover with cold water.
- Place onto a medium heat and bring up to a simmer.
- Turn down the heat to low, cover, then keep cooking on a gentle heat for 12 minutes, or until the potatoes are tender.
- Drain, then add in the milk, butter, and a small pinch of salt before mashing until smooth. Cover and keep warm.
Method for Creamy Tuscan Chicken
- Heat the oil over a medium heat in a skillet pan and season the chicken with a pinch of salt.
- Grill the chicken for 3-4 minutes on each side, or until it has a golden crust on the outside.
- Remove the chicken, set it aside, and place the pan back onto a medium heat.
- Add in the onion and garlic and cook until softened.
- Add in the oregano, tomatoes, and tomato paste and cook for 1 minute.
- Stir in the spinach, black pepper, cream, and Parmesan, then nestle the chicken back into the sauce.
- Cover with the lid and leave on a very gentle simmer for 3 minutes to warm through.
- Place the mashed potato into serving bowls, then top with the chicken and a spoonful of the sauce.
- Garnish with extra Parmesan and basil leaves before serving.
