Smashed Broccoli, Almond and Chilli Hummus Recipe

Ingredients
- 2 heads broccoli, stems trimmed, chopped into 1-2cm pieces
- 1 cup frozen peas
- 1 loose packed cup mint leaves
- ¼ cup dill, chopped
- 2/3 cup roasted whole almonds, chopped
- 1 cup hummus to serve
- 3 pieces Lebanese bread
- 2 teaspoons za'atar spice mix
Dressing Ingredients
- 1 long red chilli, seeded, sliced
- 2 cloves garlic, finely chopped
- ½ cup extra virgin olive oil, divided into 2 portions
- Sea salt and pepper to taste
- Juice and zest of ½ lemon
- 1 tablespoon honey
Method
- Preheat the oven to 180 degrees Celsius.
- Brush the Lebanese bread with half the oil, a pinch of salt and half the za'atar mix.
- Place onto 2 lined oven trays and cook for 6-8 minutes, or until crispy.
- Remove from the oven and set aside to cool, then break into pieces.
- Bring a pot of salted water up to the boil then add in the broccoli and peas.
- Blanch for 2 minutes, then drain and rinse under cold water to cool it down.
- Drain again then place into a large mixing bowl along with the mint, dill and almonds.
- Warm the remaining oil in a small pot over a medium heat.
- Place the chilli and garlic into a heat-proof bowl then carefully pour the hot oil over the top so it sizzles.
- Stir in the lemon zest, lemon juice, salt, pepper and honey until emulsified.
- Pour the dressing over the salad then toss to coat.
- Spread the hummus onto the base of a serving platter then pile the broccoli mixture on top.
- Sprinkle with the remaining za'atar then serve with the crispbread on the side.
