Thermidor Oyster Bar & Brasserie Launches New Summer Menu with Seafood and Spritzes

Newcastle's Thermidor Oyster Bar & Brasserie, helmed by chef Josh Gregory, has unveiled its new summer menu, featuring a mix of seafood, grilled meats, and refreshing cocktails. The restaurant, located on Honeysuckle Drive, aims to offer a more approachable dining experience while maintaining its commitment to high-quality produce.

The new offerings include 'Bottomless Moules Frites' on Thursday nights and a $35 Friday Business Lunch menu with options like steak frites with Diane sauce, saffron risotto, Cajun chicken, 'Moules Marinara', and seared yellowfin tuna. Josh Gregory said the goal was to provide affordable and relatable dishes for casual diners.

Seafood remains a focus, but the menu now features more meat options, such as a tomahawk steak and smoky hanger steak cooked on an ironbark grill. International influences include XO sauce on hand-rolled orecchiette, Korean slow-roasted pork 'bossam', and blue swimmer crab with typhoon-style sauce.

For drinks, the summer emphasis is on 'spritzy and smashable' options like the Coastal Spritz with vodka and elderflower. Wine pairings include Mercer Wines' Vermentino and a Japanese dry from Modus. The restaurant has expanded outdoor seating and air-conditioned indoor areas to accommodate guests.
