Spanish-born Australian chef Miguel Maestre has shared his recipe for a crispy roast pork and pork belly banh mi. The dish, which serves four, features his take on the classic Vietnamese sandwich.
Maestre is well known as a former co-host of 'The Living Room' and has appeared on numerous cooking shows. He will be appearing at the Good Food and Wine Show Christmas Markets in Sydney from November 21-23 and in Melbourne from December 5-7.
The recipe includes a crispy pork belly component, which Maestre prepares with a crackling skin. The banh mi is assembled with traditional elements such as pickled vegetables, fresh herbs, and a savory spread.
Maestre's version aims to balance the rich, crispy pork with the freshness of the accompaniments. The chef recommends using high-quality pork belly for the best results.
