Chef and Coles ambassador Michael Weldon has given the classic Anzac biscuit a modern makeover just in time for April 25. Appearing on Sunrise on Friday, Weldon showcased two indulgent desserts that transform the traditional treat into crowd-pleasing creations.
The first recipe features golden syrup pancakes topped with a crumble made from crushed Anzac biscuits and cream. The second dessert turns the biscuits into ice cream sandwiches filled with caramel and jam, offering a fresh twist on a beloved classic.
Weldon's creations aim to provide a sweet upgrade to the nostalgic favourite, making it suitable for celebrations on April 25. The recipes are part of a collaboration with Coles, where Weldon serves as an ambassador.
