Bake Off star Adam Miller has shared his ultimate Easter carrot cake recipe, featuring layers of spiced cake, cream cheese frosting, and a salted caramel twist. The recipe, demonstrated on The Morning Show, yields a soft, flavour-packed dessert that can be adapted into cupcakes, a bundt cake, or a classic layered showstopper.
For a cupcake version, Miller suggests using a melon baller or teaspoon to scoop out a divot in the top of each cupcake, then filling it with salted caramel. Place the scooped-out piece back on top, pipe a ring of cream cheese icing to form a nest, and fill the ring with small Easter eggs.
If making a bundt cake, smother the cake in cream cheese icing. Use shards from a Flake or similar chocolate bar to create a nest around the top, then fill the centre with a chocolate Easter bunny and small Easter eggs for a festive finish.
